White brinjal slices
Super simple and delicious, these brinjal slices will disappear very quickly! We've chosen to use white brinjals in this recipe. They're smaller, and have less moisture than their purple counterparts, but they also tend to have a thicker skin. You can use your usual brinjal, but adjust cooking time accordingly, and peeling them is optional.

Instructions
  1. Pre-heat the oven to 200 degrees.
  2. Peel the white brinjals. A standard veggie peeler works best here.
  3. Slice the brinjals into slices, thinner slices will turn to yummy crisps, thicker slices will be soft and caramelised - you decide!
  4. Place sliced brinjals in a baking tray, drizzle with olive oil and thyme and season with salt and pepper. Make sure the brinjals are coated well.
  5. Place in a hot oven for 10-20 minutes, depending on how thin you've cut them. Keep an eye on them, they'll burn easily. Taste one to check doneness, and enjoy as a snack or side dish - yum!!
