Parsnip, pear & thyme soup
An unusual combination, this warming winter soup is low in sugar, but packed full of goodness!

Instructions
  1. Heat the olive oil or butter in a large pot, on medium-high heat.
  2. Add the onion or leeks, and cook until soft. Add everything else, season well, and bring to the boil. Reduce the heat and simmer for about 20 minutes, or until all veggies are cooked.
  3. Allow to cool slightly, then blend together using a hand or stand blender. Serve with a dollop of yoghurt, some grilled halloumi and crispy bacon.
