  1. Heat the butter and olive oil in a pan over medium heat, until sizzling.
  2. Meanwhile, trim the leafy greens off the fennel bulbs (reserve as garnish, if you like), and cut each fennel bulb lengthwise into four slices.
  3. When the pan is ready, lay fennel slices in skillet; cook, until browned, turning once, about 5 minutes per side.
  4. Pour the orange juice over fennel and season with salt and pepper. Bring mixture to a boil, then reduce to a simmer. Cook until fennel is tender, about 15 minutes.
  5. Add the white wine, and continue cooking until fennel is very tender and sauce has thickened, about 10 minutes more.
  6. Season with salt and pepper, is you like, and serve warm.
