Lettuce & pea soup
Lettuce is available all year round, so take advantage with this fresh lettuce soup, which is delicious no matter the season. Serve hot or cold.

Instructions
  1. Heat the butter in a large pot over low-medium heat, and stir in the flour.
  2. Add the chopped onion or leek, and the crushed garlic, and cook until soft.
  3. Add the stock, an extra cup of water, lettuce, peas and cucumber and bring to the boil. Reduce heat slightly and simmer, with the lid on, for 5 minutes.
  4. Remove from the heat and add the mint, lemon juice and sugar/sweetener.
  5. Blend using a hand or stand blender, and season well. Bring back to the boil, and serve, topped with yoghurt and pan-fried halloumi.
