Munching Mongoose Rosemary
Instructions
  1. Preheat the oven to 160 degree.
  2. Put a good glug of olive oil in a pan, and bring to a low/medium heat. Deseed and finely chop the chillies. Add the garlic, chillies and rosemary leaves to the pan. Finely chop the onion and add to the pan, along with the paprika. Fry for 10 minutes or so, until soft and sticky.
  3. Drain the liquid away from the beans, and add to the pan, along with the tin of tomatoes. Add a good splash of water. Cook for a further 5 minutes. Season to taste.
  4. Transfer the mixture to an overproof dish (you could have used an overproof frying to start, if you have one). Scrunch up a piece of greaseproof paper and wet it under the tap. Place it lightly over the surface of the beans.
  5. Bake for about an hour, or until thick, dark and sticky.
  6. Serve with toast and a sprinkling of cheese - yummm!
