Beetroot & Orange Salad
Delicious citrus paired with earthy beets makes for a salad that tastes as lovely as it looks!

Instructions
  1. Preheat the oven to 200 degrees.
  2. Peel the beetroot and cut into wedges (the size of orange segments). Place in a baking tray and coat with olive oil, salt and pepper.
  3. Bake the beetroot in the oven for 20-25 minutes, or until tender, and starting to crisp up a little. Once cooked, allow to cool slightly.
  4. In the meantime, top and tail the oranges and cut off the peel. Slice into rounds.
  5. Toast the nuts in a pan. If you like use a little of the honey to drizzle over them once toasted for a yummy nut-brittle taste.
  6. Make the dressing. Whisk the olive oil, honey, cinnamon and chilli flakes, and the juice from one orange. Season to taste.
  7. Arrange salad leaves, oranges and beetroot on a plate. Drizzle over the dressing. Scatter with the nuts and mint leaves, and feta (if using).
